Castile and Leon produces the third part of the domestic cheese production. This figure reaches 70% of the national total in the case of pure sheep cheese.
The potential of the community concerning cheeses is not only related to the amount but it is also guaranteed for its quality. This community has three quality certified figures for this product: PDO Queso Zamorano, GI Queso de Valdeón and Guarantee brand Queso Arribes of Salamanca.
Figures that are joined by the collective brand Queso Castellano, created by the Dairy Industries Federation of Castile and Leon and introduced April 14th of this year. An ensign that even if it is new, has already managed to have 23 companies registered with an estimated production that will certify under the brand of 10,000,000 kg.
